Cugnà

This is the Piedmontese term for cotognata , a quince and sugar paste made in many regions of Italy (especially Sicily and Apulia). In the Piedmont area, particularly Asti, cugnà is prepared at the time of the wine harvest and is more complex than the cotognata from other areas.
