Fregola

Not a grain as some people believe, fregola is an ancient form of pasta made from semolina, a staple of the Sardinian kitchen since Ligurian navigators from the Tabarka colony imported it from North Africa. Semolina flour is combined with water until tiny, uneven pellets form.
