Ossobuco

By now one of America's favorite Italian dishes, ossobuco is a sublime rendering of braised veal shanks, typical of Lombardy. The shanks are first browned, then cooked with flavorful vegetables and herbs until they are meltingly tender and the meat is falling off the bone.
