Soffritto

The soffritto is the starting point and the first step in building layers of flavor in most Italian dishes; it is a combination of vegetables - carrots, onions, celery, garlic, and sometimes herbs - that are cut more or less finely and cooked slowly in butter, oil, lard, or less commonly in the fat from pancetta or Prosciutto, until they wilt and become aromatic.
